Healthy Coconut Chocolate Protein Bites.

Hi Friends,

I’ve been seeing these recipes for different protein balls and bites all over lately and I wanted to see if I could make some of my own. Turns out it’s super easy and I’ve had these on repeat in my fridge the past few weeks. These are added sugar free, high in protein and good fats, and super tasty!

Servings: Makes 12 1″ balls

Ingredients:
1/2 cup raw cashews
4 dates, finely chopped
1/4 cup almond butter
1 tbsp. chia seeds
2 scoops collagen peptides (or your favorite protein powder)
1/4 tsp. vanilla
1/4 cup unsweetened coconut
1/4 cup dark chocolate chips (I use Enjoy Life Dairy free chocolate chips)
1 tbsp. coconut oil
1 tbsp. cacao powder (optional)
1 tbsp. maca powder (optional)

First up, I tossed my cashews in my chopper, which is like a tiny food processor, to chop them up. Next, I hand chopped my 4 dates with a knife on a cutting board. I find if I try to put the dates in the chopper, it becomes a sticky mess.

Combine all your ingredients in a bowl and mix well. If desired, you can add cacao powder and/or maca powder for a richer, nuttier taste. I’ve made these with and without those two additives and they are tasty either way. Maca and cacao both have energizing properties so if you’re looking for an extra energy boost, I recommend adding them!

Use your hands to form the mixture into 1 inch balls. Store in the refrigerator in an airtight container for up to two weeks. 🙂

One thing to note, the second time I made these, I used miniature chocolate chips and found it was easier to form the ball shape. These are perfect for a little pre-workout snack or an afternoon pick me up!
